First Impressions: Inari Comporta

On our first evening in Portugal, we'll gather for dinner at Inari Comporta, where one of Portugal's most celebrated chefs has created something special. Vítor Sobral grew up in this region—the Alentejo coast is his homeland—and you can taste that connection in every dish.

The restaurant itself is a converted barn built from century-old reclaimed wood beams, with floor-to-ceiling windows overlooking the resort's rice paddies. It's named for Inari, the Japanese goddess of rice, honoring the landscape that surrounds you. Chef Sobral spends his mornings walking through the property's gardens, picking what's ready—fresh vegetables, fresh herbs, whatever the season offers—then building the day's menu around it.

This is Portuguese cuisine that feels both rooted and refined. Fresh Atlantic seafood, vegetables pulled from the earth that morning, traditional recipes reimagined with a contemporary eye. The kind of cooking that makes you understand a place, not just taste it.
